Vah-Chef Sanjay Thumma shows how to cook fish fry (small fish stuffed) the Indian way. Use small kind of fish when cooking this dish such as maral fish which is a freshwater fish also called Snakehead. Marinate the fish by adding chili powder, salt, a little bit of ginger garlic base, oil and lime juice. Mix all the said ingredients and apply on the fish. After marinating the fish, keep it aside for at least half an hour. Meanwhile, make Masala preparation with rich hot oil by adding chopped onions chopped finely, salt and onions should be cooked until they are nicely golden brown. Add ginger garlic base, pinch of gamerick, coconut powder, coriander powder, a little bit of cumin powder, chili powder. Switch off the flame and add some chopped coriander, gun powder or little bit of curry leaf powder (optional) and mix all of it. Transfer to a plate and let it cool down to be used as stuffing for the fish. Take the fried masala and put half of it in the belly of the fish. After all the fish have been stuffed, the half masala mixture can be used on the top of the fish. You can add chopped curry leaves on the mixture (optional). Add oil in the pan and put flame in the medium and fry the fish, turning the fish on both sides. Make sure the masala stays inside the fish while frying. Cook the fish on all sides. Sprinkle the left over masala on top of the fish and sprinkle some chopped coriander. Serve. Follow Chef Sanjay's cooking pointers and you'll be cooking the perfect Indian fish fry all the time.
