Ingredients: Egg wash: 2 eggs, Old Bay spice, salt. Flour dredge: 1 cup cornmeal, medium to small grain. 1/2 cup of flour, 1/2 cup of cornstarch into a brown bag. Spicy tartar sauce: Mayonnaise, relish, lemon juice and hot sauce.
Cut fillets in half. Place into egg wash. Heat a cast iron skillet to 375 degrees. Put fish into page. Remove from bag and place into skillet. Place spicy tartar sauce on roll. Add catfish and romaine lettuce to the roll.
