Things You'll Need: 2 Tbsp paprika 2 & 1/2 tsp salt 2 tsp lemon pepper 1 & 1/2 tsp garlic powder 1 & 1/2 tsp dried basil leaves, crushed 1 & 1/2 tsp ground red pepper 1 tsp onion powder 1 tsp dried thyme 4 catfish fillets (about 1 & 1/2 pounds) 3/4 cup butter, melted Step 1 Heat until drop of water dances on skillet Heat a large cast iron or heavy aluminum skillet over medium-high heat for about 10 minutes. Make sure it is hot enough that a drop of water dances on the skillet. Step 2 Combine paprika and other herbs and spices While skillet is heating, combine paprika, salt, lemon pepper, garlic powder, crushed dried basil, ground red pepper, onion powder and thyme, in a large shallow dish. Step 3 Dip fillets in melted butter Dip catfish fillets in melted butter, and dredge in seasoning mixture. Place on wax paper, and cook as directed below. Step 4 Cook 2 to 3 minutes each side or until blackened Cook fillets, 2 at a time, 2 to 3 minutes on each side or until fish is blackened and flakes with a fork. Serve with lemon wedges or tartar sauce, if desired. Your dinner is ready with the addition of rice or potato and a vegetable.
