Although you could do this with practically any fish you desire, tilapia is best when it comes to adding a little fruity taste. The great taste of apples, mangos, and pineapples goes great with this grilled wonder. Tilapia is a delicately-flavored, fresh water fish that is flaky, but just firm enough for grilling. Brenton Blanchard shows a simple preparation of a delicious and healthy grilled dish. Fresh fruit salsa provides a balance of sweetness, acidity and heat to brighten the flavor of the tilapia, and add excellent nutritional value. INGREDIENTS:

Serves 2

For Salsa

* ½ cup fresh pineapple, diced

* ½ cup mango, diced

* ½ cup Granny Smith apple, diced

* ½ jalapeno pepper, diced

* 1 tsp lemon zest

* 1 tsp ginger, minced

* 1 tsp cilantro, chopped

* kosher salt & freshly-ground black pepper

For Fish

* 2 boneless, skinless tilapia fillets

* 1 lemon

* kosher salt & freshly-ground pepper

* canola oil for drizzling

HOW-TO:

1. In a bowl, mix together salsa ingredients. Season with salt and freshly-ground pepper

2. Heat grill to medium-low (if using gas grill). Assure that grill is cleaned and oiled

3. Prepare halibut by squeezing fresh lemon, sprinkling with salt and pepper, and drizzling or brushing with oil

4. Place on grill, cook on first side 2-3 minutes, flip, and cook other side 2-3 more minutes. Carefully remove to plate, and top with salsa
